01 - 8 slices sourdough bread
02 - 1 pound thinly sliced roast beef
03 - 8 slices sharp cheddar cheese

04 - 4 tablespoons unsalted butter, softened
05 - 1 tablespoon Dijon mustard (optional)
06 - Salt, to taste
07 - Black pepper, to taste

08 - Fresh arugula or spinach (optional)

# How to Make It:

01 - Warm a large non-stick skillet over medium heat to ensure even toasting.
02 - Spread approximately 1 tablespoon of softened butter on one side of each bread slice.
03 - Place a slice of bread butter-side down onto the hot skillet.
04 - Optionally, apply a thin layer of Dijon mustard to the unbuttered side. Arrange several slices of roast beef and top with two slices of sharp cheddar cheese.
05 - Cover with a second slice of bread, keeping the buttered side exposed on top.
06 - Grill for 3–5 minutes, pressing gently, until the underside is golden brown and cheese begins to melt.
07 - Using a spatula, carefully turn the sandwich over and cook for an additional 3–5 minutes, ensuring both sides are crisp and the cheese is thoroughly melted.
