A tender, moist cake packed with crushed pineapple and finished with a sweet pineapple juice glaze.

# Ingredients:

→ Cake Base

01 - 1 1/2 cups all-purpose flour
02 - 1 teaspoon baking powder
03 - 1/2 teaspoon salt
04 - 1/2 cup unsalted butter, softened to room temperature
05 - 1 cup granulated sugar
06 - 2 large eggs
07 - 1 teaspoon vanilla extract

→ Moisture & Flavor

08 - 1/2 cup sour cream
09 - 1 cup crushed pineapple, well drained

→ Glaze

10 - 1/2 cup powdered sugar
11 - 2 tablespoons pineapple juice

# Steps to Follow:

01 - Preheat the oven to 350°F (175°C). Grease a loaf pan and lightly coat it with flour.
02 - Whisk together the flour, baking powder, and salt in a medium bowl until well combined.
03 - Beat the softened butter and sugar together with an electric mixer until light and fluffy.
04 - Add the eggs one at a time, beating after each addition. Mix in the vanilla extract.
05 - Alternate adding the dry ingredients and sour cream to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
06 - Gently fold in the well-drained crushed pineapple. Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
07 - Once the cake has cooled completely, mix the powdered sugar and pineapple juice to create a glaze. Drizzle evenly over the top of the cake.

# Additional Notes:

01 - Ensure the crushed pineapple is well-drained to prevent the cake from becoming soggy.
02 - Using room temperature ingredients improves mixing consistency.
03 - Avoid overmixing the batter once the flour is added to maintain a tender texture.
