Margarita Grilled Shrimp Kabobs (Print Version)

Juicy jumbo shrimp marinated in zesty spices and grilled to perfection, finished with fresh cilantro and lime.

# Ingredients:

→ Marinade

01 - 1/3 cup olive oil
02 - 2 large garlic cloves, roughly chopped
03 - 1 teaspoon minced jalapeño
04 - 2 teaspoons brown sugar
05 - 1 teaspoon smoked paprika
06 - 1 teaspoon chili powder
07 - 1 teaspoon garlic powder
08 - 1 teaspoon onion powder
09 - 1 teaspoon cumin
10 - 1 teaspoon kosher salt
11 - 1/2 teaspoon black pepper

→ Shrimp

12 - 1 pound raw extra jumbo shrimp (16–20 per pound), peeled and deveined
13 - 2 teaspoons tequila (optional)
14 - Thin slices of fresh lime (if using skewers)
15 - Chopped fresh cilantro
16 - Fresh lime wedges, for serving

# Steps to Follow:

01 - In a small bowl or measuring cup, combine all marinade ingredients. Use an immersion blender, food processor, or blender to process until smooth.
02 - Place the shrimp in a wide, shallow bowl. Pour the marinade over the shrimp and gently stir to coat evenly. Cover and refrigerate for 2 to 3 hours, stirring gently halfway through.
03 - Drizzle tequila over the marinated shrimp and gently stir to combine.
04 - If using wooden skewers, soak them in water for at least 2 hours to prevent burning. Preheat the grill to medium-high heat. Clean and oil the grill grates well.
05 - Thread the shrimp onto skewers, optionally placing a folded slice of lime between each shrimp.
06 - Place the shrimp (skewered or unskewered) on the grill. Grill for 3 to 4 minutes per side, or until the shrimp are opaque and have a nice char. Be cautious not to overcook; shrimp cook quickly.
07 - Transfer the grilled shrimp to a platter. Sprinkle with chopped cilantro and serve with fresh lime wedges for squeezing over the top.

# Additional Notes:

01 - Use Extra Jumbo Shrimp: Larger shrimp are less likely to fall through the grill grates and provide a meatier bite.
02 - Marinate Adequately: Allow the shrimp to marinate for at least 2 hours to absorb the flavors fully.
03 - Monitor Grilling: Keep an eye on the grill, especially if using tequila, as it may cause flare-ups.
04 - Skewer Soaking: If using wooden skewers, soaking them helps prevent burning during grilling.
