Preheat oven to 190°C. Lightly grease a baking dish with nonstick cooking spray.

Heat a skillet over medium heat and sauté diced onions until softened, about 5 minutes.

In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half the Parmesan cheese. Mix until evenly incorporated.

Shape the mixture into a loaf and place into the prepared baking dish. Sprinkle the remaining Parmesan cheese over the top. Add paprika or Italian seasoning if desired.

Bake for 45 to 50 minutes or until the internal temperature reaches 74°C. Allow to rest for 10 minutes before slicing.
