Tender salmon cubes in crispy panko coating, paired with a spicy-sweet Bang Bang sauce for an irresistible seafood treat.

# Ingredients:

01 - 1 pound fresh salmon fillet, skin removed
02 - 1 cup panko breadcrumbs
03 - 1/2 cup all-purpose flour
04 - 2 large eggs
05 - 1 teaspoon garlic powder
06 - 1 teaspoon onion powder
07 - 1 teaspoon smoked paprika
08 - 1/2 teaspoon salt
09 - 1/2 teaspoon black pepper
10 - 1/4 teaspoon cayenne pepper (optional, for heat)
11 - 1/2 cup mayonnaise
12 - 2 tablespoons sweet chili sauce
13 - 1 tablespoon sriracha (adjust to taste)
14 - 1 tablespoon lime juice
15 - Fresh cilantro, chopped (for garnish)
16 - Vegetable oil for frying

# Steps to Follow:

01 - Cut the salmon fillet into 1-inch cubes and pat dry with paper towels.
02 - In a shallow bowl, mix flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. In a second bowl, whisk the eggs. In a third bowl, place the panko breadcrumbs.
03 - Coat each salmon piece in the flour mixture, dip in the eggs, and roll in the panko breadcrumbs. Ensure the breadcrumbs stick well.
04 - Heat vegetable oil in a large skillet over medium-high heat. Once hot, fry the salmon bites in batches for 3-4 minutes on each side until golden brown. Transfer to a paper towel-lined plate to drain excess oil.
05 - In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust sriracha for desired heat.
06 - Arrange the fried salmon bites on a platter, drizzle with Bang Bang sauce or serve on the side, and garnish with chopped cilantro.

# Additional Notes:

01 - For a spicier kick, increase the amount of sriracha in the sauce.
02 - Serve with lime wedges for an extra burst of flavor.
03 - These bites can be paired with steamed rice or a fresh salad.
