                Trim chicken and cut into bite-sized pieces. Season lightly with salt and pepper.

                In a bowl, whisk together pineapple juice, brown sugar, soy sauce, and minced garlic. Add diced pineapple if using.

                Place the chicken in the bottom of the crock pot and pour the sauce over the top.

                Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked.

                To thicken the sauce (optional), mix cornstarch with water and stir into the crock pot during the last 30 minutes of cooking on high.

                Serve hot, garnished with chopped green onions.
