Superfood Berry Salad (Print Version)

A vibrant mix of super greens, fresh berries, nuts and crumbled goat cheese, dressed with a creamy homemade lemon herb sauce.

# Ingredients:

→ Salad

01 - 3 cups super greens mix (baby spinach, baby arugula, red & green Swiss chard, chicory, green cabbage, chopped Brussel sprouts)
02 - 1 cup kale, roughly chopped
03 - 1 cup strawberries, diced
04 - 1 cup blackberries
05 - 1 cup blueberries
06 - 1/4 cup shelled pistachios, roughly chopped
07 - 2 tablespoons pepitas
08 - Blueberry goat cheese, crumbled (or substitute with regular goat cheese)

→ Dressing

09 - 1/4 cup plain nonfat Greek yogurt
10 - 2 tablespoons freshly squeezed lemon juice
11 - 1 teaspoon mustard
12 - 1 tablespoon extra virgin olive oil
13 - 1/4 cup fresh mint leaves, packed
14 - 1/4 cup fresh parsley leaves
15 - 2 tablespoons fresh oregano leaves, packed
16 - Coarse salt and ground black pepper, to taste

# Steps to Follow:

01 - In a blender or food processor, pulse all dressing ingredients until fully combined. Add salt and black pepper to taste. Set aside.
02 - In a large bowl, toss all salad ingredients together with the prepared dressing. Top with fresh ground pepper as desired. Serve immediately.
