Carefully wash the strawberries. Cut off the stem to create a flat base, then cut each strawberry into three sections: the base, middle, and top. The top will serve as the Santa hat.

In a small mixing bowl, combine cream cheese, powdered sugar, and vanilla extract. Mix until smooth. Transfer the mixture into a piping bag.

Place the base of the strawberry on a plate. Pipe the cream cheese mixture on top, ensuring it is tall enough to support the Santa hat. Place the hat (top strawberry section) on the filling. Use the piping bag to add a white dot of cream cheese at the tip of the hat.

Use decorative red and black icing to draw the Santa face on the cream cheese filling.
