Preheat oven to 180°C. Lightly grease a 33x23 cm baking dish with nonstick spray.

In a large skillet over medium-high heat, cook ground beef and chopped onion until beef is browned and fully cooked, about 10 minutes. Add minced garlic and cook for 1 additional minute.

Add tomato sauce and Italian seasoning to the skillet. Stir well and let the mixture simmer for 5 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

Meanwhile, cook egg noodles in a large pot of salted boiling water according to package instructions. Drain and set aside.

In a large mixing bowl, combine sour cream and cottage cheese. Add cooked noodles. Season with salt and pepper, and stir until well combined.

Spread half of the noodle mixture evenly in the prepared baking dish. Layer with half of the meat sauce. Repeat with remaining noodles and sauce.

Evenly sprinkle grated cheddar cheese over the top. Bake in preheated oven until sauce is bubbling and cheese is melted, about 30 minutes.

Allow casserole to cool for 10 minutes before slicing and serving.
