Wrap dough securely in plastic wrap and refrigerate for a minimum of 30 minutes to firm.

Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.

Scoop chilled dough into uniform balls and, if desired, roll lightly in granulated sugar. Place at intervals on prepared baking sheet.

Bake for 8–10 minutes until edges are set and centers remain soft. Allow to cool on tray for several minutes before transferring to a wire rack.
