Spread the potato wedges evenly onto prepared baking sheets, leaving space between each wedge for air circulation. Place wedges skin side down, with points facing upwards.

Keep the baking sheets in the oven, reduce the temperature to 375°F, and bake for an additional 40 minutes or until crispy and golden brown.
