Seasoned Baked Potato Wedges (Print Version)

Perfectly seasoned potato wedges with a zesty spice blend, crispy exterior and fluffy interior - the ultimate homemade side dish.

# Ingredients:

01 - 5 large russet potatoes, washed and dried
02 - 1/3 cup vegetable oil
03 - 5 cloves garlic, minced
04 - 1 cup grated Parmesan cheese
05 - 1 tablespoon cornstarch
06 - 2 teaspoons black pepper
07 - 1 1/2 teaspoons kosher salt
08 - 1 teaspoon onion powder
09 - 1 teaspoon paprika
10 - 1 teaspoon chili powder
11 - 1/4 cup minced fresh cilantro

# Steps to Follow:

01 - After washing and drying the potatoes, slice one potato in half lengthwise. Then slice each half into 4 equally sized wedges. Repeat with all potatoes.
02 - Preheat oven to 400°F and line several baking sheets with parchment paper.
03 - Add potato wedges to a large mixing bowl, then add vegetable oil and garlic. Stir to combine.
04 - Add Parmesan, cornstarch, black pepper, salt, onion powder, paprika, chili powder, and minced cilantro. Stir to combine. Use your hands for thorough mixing.
05 - Spread the potato wedges evenly onto prepared baking sheets, leaving space between each wedge for air circulation. Place wedges skin side down, with points facing upwards.
06 - Bake in preheated oven for 15 minutes.
07 - Keep the baking sheets in the oven, reduce the temperature to 375°F, and bake for an additional 40 minutes or until crispy and golden brown.
08 - Serve hot with your favorite dipping sauce.

# Additional Notes:

01 - For even crispier wedges, soak the sliced potatoes in cold water for 30-45 minutes, then dry them thoroughly before proceeding with the recipe.
