In a large bowl, toss carrots with olive oil, salt, black pepper, and fresh herbs if using until evenly coated.

Arrange the carrots in a single layer on the prepared baking sheet. Roast for 25–30 minutes, turning halfway through, until tender and golden brown with caramelized edges.

While the carrots roast, place ricotta in a food processor or mixing bowl. Whip until smooth and airy, then blend in lemon zest and a small pinch of salt.

Warm honey gently in a small saucepan or microwave until just fluid. Stir in red pepper flakes or hot sauce to infuse heat.

Spread whipped ricotta evenly on a serving platter. Arrange roasted carrots on top, then drizzle with hot honey. Garnish with extra lemon zest or fresh herbs if desired. Serve warm or at room temperature.
