# How to Make It:

01 - Preheat the oven to 220°C. Line a baking sheet with parchment paper or a silicone mat.

04 - While the carrots roast, place ricotta in a food processor or mixing bowl. Whip until smooth and airy, then blend in lemon zest and a small pinch of salt.
05 - Warm honey gently in a small saucepan or microwave until just fluid. Stir in red pepper flakes or hot sauce to infuse heat.
06 - Spread whipped ricotta evenly on a serving platter. Arrange roasted carrots on top, then drizzle with hot honey. Garnish with extra lemon zest or fresh herbs if desired. Serve warm or at room temperature.
