Roll 1 tablespoon-sized portions of dough into balls. Place them on the baking sheet, ensuring space between each piece.

Bake for 12-15 minutes, or until the edges are lightly golden. Let the bites cool on the baking sheet for 5 minutes.

While still warm, drizzle honey over each bite and sprinkle with additional chopped pistachios, if desired.
