Preheat oven to 190°C.

In a skillet over medium heat, brown the smoked sausage slices. Remove and set aside.

In the same skillet, sauté onion and minced garlic until translucent.

In a large mixing bowl, combine diced potatoes, browned sausage, sautéed onion and garlic, shredded cheddar cheese, ranch dressing mix, milk, melted butter, salt, and black pepper. Mix thoroughly to coat.

Transfer mixture to a greased baking dish and spread evenly.

Cover the baking dish with aluminum foil and bake for 60 minutes.

Remove foil and continue baking for an additional 15 minutes, or until potatoes are tender and the surface is golden brown.

Remove from the oven and garnish with chopped green onions before serving.
