Trim the pork loin of excess fat and season with salt and pepper. Set aside.

Heat a large pan over medium-high heat. Add oil, and once hot, sear the pork loin on each side for 2-4 minutes until golden.

Place the pork loin into the slow cooker. Rub with minced garlic, then add soy sauce, pineapple chunks with juice, and distribute the brown sugar evenly over the pork.

Cover the slow cooker with the lid and cook on low for 6 hours for a tender pork loin that can still be sliced.

For extra soft shredded pork, cook on low for 8-10 hours, occasionally spooning juices over the pork to keep it moist. Shred the pork, return it to the slow cooker, and cook on low for an additional hour.
