Slow Cooker Pineapple Pork (Print Version)

Tender pork loin with pineapple chunks, brown sugar, and soy sauce creating a perfect sweet-savory tropical dinner option.

# Ingredients:

01 - 2-3 lb pork loin, trimmed of excess fat
02 - 2 tablespoons vegetable oil
03 - Salt and pepper, to taste
04 - 8 cloves garlic, minced
05 - 1/4 cup soy sauce
06 - 1/2 cup brown sugar
07 - 1 can (23.5 ounces) pineapple chunks with juice

# Steps to Follow:

01 - Trim the pork loin of excess fat and season with salt and pepper. Set aside.
02 - Heat a large pan over medium-high heat. Add oil, and once hot, sear the pork loin on each side for 2-4 minutes until golden.
03 - Place the pork loin into the slow cooker. Rub with minced garlic, then add soy sauce, pineapple chunks with juice, and distribute the brown sugar evenly over the pork.
04 - Cover the slow cooker with the lid and cook on low for 6 hours for a tender pork loin that can still be sliced.
05 - For extra soft shredded pork, cook on low for 8-10 hours, occasionally spooning juices over the pork to keep it moist. Shred the pork, return it to the slow cooker, and cook on low for an additional hour.
06 - Serve the pork loin and enjoy.

# Additional Notes:

01 - The internal temperature of pork loin should reach 145°F when served. Remove it from the slow cooker at 135°F and allow it to rest for 10-15 minutes under foil before slicing.
02 - Cooking the pork in pineapple juice helps tenderize the meat. Do not cook on high, as the low and slow method ensures the meat remains tender.
03 - Sear the meat before slow cooking to lock in juices. Allow the meat to rest before serving for optimal results.
04 - Use pork loin for this recipe, as pork tenderloin is too lean and won't yield the same results.
