Peel, core, and cut the pineapple into small chunks. Set aside.

In a medium saucepan, combine granulated sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir well and bring to a gentle boil over medium heat.

Add the pineapple chunks to the boiling syrup. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.

Remove the saucepan from heat and let it cool for about 30 minutes. Stir in fresh mint leaves if desired.

Transfer the mixture, including the syrup, into sterilized jars. Seal tightly and let it rest for at least 24 hours in the refrigerator to allow flavors to meld.
