Juicy pineapple chunks infused with sweet-spicy syrup, creating the perfect balance of bold flavors in every bite.

# Ingredients:

01 - 1 medium fresh pineapple, peeled, cored, and diced
02 - 1 1/2 cups granulated sugar
03 - 3/4 cup apple cider vinegar
04 - 1 1/2 teaspoons red pepper flakes
05 - 1/2 teaspoon ground ginger
06 - Fresh mint leaves, optional, for garnish

# Steps to Follow:

01 - Peel, core, and cut the pineapple into small chunks. Set aside.
02 - In a medium saucepan, combine granulated sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir well and bring to a gentle boil over medium heat.
03 - Add the pineapple chunks to the boiling syrup. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
04 - Remove the saucepan from heat and let it cool for about 30 minutes. Stir in fresh mint leaves if desired.
05 - Transfer the mixture, including the syrup, into sterilized jars. Seal tightly and let it rest for at least 24 hours in the refrigerator to allow flavors to meld.
06 - Serve as a topping for burgers, tacos, or grilled meats, or enjoy it straight from the jar.

# Additional Notes:

01 - Adjust the heat level by increasing or decreasing the amount of red pepper flakes.
02 - Ensure jars are sterilized to extend shelf life.
03 - Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
