# Ingredients:

→ Fritters

01 - 2 cups all-purpose flour
02 - 1/4 cup granulated sugar
03 - 1 tablespoon baking powder
04 - 1/2 teaspoon salt
05 - 1/2 teaspoon cinnamon (optional)
06 - 2 large eggs
07 - 3/4 cup whole milk
08 - 2 teaspoons vanilla extract
09 - 2 cups peeled and diced fresh peaches
10 - Vegetable or canola oil (for frying)

11 - 1 cup powdered sugar
12 - 2 tablespoons milk
13 - 1/2 teaspoon vanilla extract

# Steps to Follow:

01 - Peel and dice fresh peaches. Set aside.
02 - In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. In a separate bowl, beat eggs, then stir in milk and vanilla. Combine wet and dry ingredients just until mixed. Gently fold in the diced peaches.
03 - Add oil to a deep frying pan or Dutch oven until about 5 cm deep. Heat to 175°C.
04 - Drop heaping tablespoons of batter into the hot oil. Fry for 2–3 minutes per side until golden brown. Avoid overcrowding the pan. Remove fritters using a slotted spoon and drain on paper towels.
05 - Mix powdered sugar, milk, and vanilla extract until smooth. Drizzle over warm fritters or dip the tops directly into the glaze.

01 - Use firm but ripe peaches for best results.
02 - Let fritters cool slightly before glazing to prevent the glaze from melting excessively.
03 - Substitute apples or blueberries if peaches are not in season.
04 - For a different flavor, use almond extract instead of vanilla.
05 - Store fritters in an airtight container at room temperature for 2 days. Reheat in a 150°C oven to restore crispiness.
