Mediterranean Steak Bowl (Print Version)

Juicy sirloin steak with Mediterranean toppings, homemade tzatziki and tangy lemon vinaigrette over your choice of grains.

# Ingredients:

→ Steak and Marinade

01 - 1 lb sirloin steak, about 1-inch thick
02 - 3 tablespoons olive oil
03 - 2 garlic cloves, minced
04 - 1 tablespoon fresh lemon juice
05 - 1 teaspoon dried oregano
06 - 1 teaspoon dried thyme
07 - ½ teaspoon salt
08 - ¼ teaspoon black pepper

→ Bowl Base

09 - 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
10 - 1 cup roasted chickpeas (optional for paleo or keto)

→ Toppings

11 - 1 cup cherry tomatoes, halved
12 - 1 cucumber, diced
13 - ½ red onion, thinly sliced
14 - ½ cup kalamata olives, pitted
15 - ⅓ cup feta cheese, crumbled (optional for dairy-free)
16 - ¼ cup fresh herbs (parsley or dill), chopped

→ Tzatziki

17 - 1 cup plain Greek yogurt (use coconut yogurt for dairy-free)
18 - ½ cucumber, grated and squeezed dry
19 - 1 tablespoon fresh lemon juice
20 - 1 garlic clove, minced
21 - 1 tablespoon fresh dill, chopped
22 - Salt and pepper, to taste

→ Lemon Vinaigrette

23 - 3 tablespoons olive oil
24 - 2 tablespoons fresh lemon juice
25 - 1 teaspoon honey (omit for Whole30)
26 - 1 garlic clove, minced
27 - ½ teaspoon dried oregano
28 - Salt and pepper, to taste

# Steps to Follow:

01 - Mix marinade ingredients and coat steak. Marinate for 30 minutes to 4 hours.
02 - Mix tzatziki ingredients and chill in the fridge.
03 - Whisk together vinaigrette ingredients.
04 - Sear steak in a hot skillet for 4–5 minutes per side. Let rest, then slice thinly.
05 - Layer grains, steak, and toppings in a bowl. Add tzatziki and drizzle with vinaigrette.
