# How to Make It:

01 - If using fresh potatoes, cut them into thin fries and soak them in cold water for 30 minutes.
02 - Drain and pat the potatoes dry. Toss them with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
03 - For the oven, preheat to 220°C (425°F), spread fries in a single layer, and bake for 25-30 minutes, flipping halfway through. For the air fryer, cook at 190°C (375°F) for 15-18 minutes, shaking the basket halfway.
04 - In a pan over medium heat, sauté the diced red onion, green and red bell peppers with a little olive oil until soft and caramelized.
05 - Once the fries are crispy, transfer them to an oven-safe dish. Sprinkle cheddar and mozzarella cheese on top, and bake for 5 minutes until melted and bubbly.
06 - Top with sautéed onions, bell peppers, jalapeños, chili flakes, and dried oregano.
07 - Mix sour cream, mayonnaise, lemon juice, garlic powder, and smoked paprika in a bowl until smooth.
08 - Drizzle the sauce over the fries and sprinkle with fresh parsley. Serve immediately.
