If using fresh potatoes, cut them into thin fries and soak them in cold water for 30 minutes.

Once the fries are crispy, transfer them to an oven-safe dish. Sprinkle cheddar and mozzarella cheese on top, and bake for 5 minutes until melted and bubbly.

Top with sautéed onions, bell peppers, jalapeños, chili flakes, and dried oregano.

Mix sour cream, mayonnaise, lemon juice, garlic powder, and smoked paprika in a bowl until smooth.
