# Ingredients:

→ Salad Base

01 - 4 medium carrots, julienned
02 - 1 tablespoon salt

→ Dressing

03 - 3 tablespoons apple cider vinegar
04 - 2 tablespoons sugar
05 - 1 tablespoon sesame oil
06 - 1 teaspoon minced garlic
07 - 1 teaspoon ground black pepper
08 - 1-2 tablespoons sesame seeds
09 - 2 green onions, finely chopped

# Steps to Follow:

01 - Peel the carrots and cut them into thin julienne strips. Use a mandoline for even slices if available.
02 - Place the julienned carrots in a mixing bowl and sprinkle with salt. Let sit for 10-15 minutes to draw out moisture.
03 - Rinse the carrots under cold water and drain thoroughly.
04 - In a separate bowl, mix apple cider vinegar, sugar, sesame oil, minced garlic, and black pepper until the sugar dissolves.
05 - Add the drained carrots to the dressing bowl. Toss to coat the carrots evenly.
06 - Sprinkle with sesame seeds and green onions, if desired. Toss lightly.
07 - Allow the salad to marinate for 10 minutes to let the flavors meld together.
08 - Transfer the salad to a serving dish and serve fresh.
