Melt mozzarella cheese either in the microwave or on the stovetop until gooey. Use parchment paper and a spatula to shape the melted cheese into tortilla shapes.

Place a spoonful of the chicken mixture in the center of each tortilla. Roll tightly, tucking in the ends to secure the filling.

Arrange rolled taquitos seam-side down on the prepared baking sheet. Bake for 15-20 minutes until golden brown and crispy.
