Preheat your Blackstone Grill to medium-high heat, approximately 400°F. Add the ground beef to the grill and cook until it is no longer pink and fully cooked through. Season with salt and pepper while cooking.

In a mixing bowl, combine mayonnaise, ketchup, chopped pickles, diced onion, and white vinegar. Stir until well combined and set aside.

Place tortillas on the grill. Spread the special sauce on one half of each tortilla. Top with ground beef, chopped pickles, and shredded cheddar cheese. Fold the tortilla in half to form a quesadilla.

Cook each quesadilla for 2-3 minutes on one side until golden brown. Flip and cook for another 2-3 minutes until both sides are golden brown and the cheese has melted.

Remove the quesadillas from the grill. Slice each quesadilla into 4 pieces and serve warm.
