01 - 1.5 lbs boneless, skinless chicken thighs
02 - 3–4 baby or medium carrots, peeled but whole
03 - 3–4 sweet potatoes, chopped
04 - 6–7 green beans

→ Sauce

05 - 1/3 cup honey
06 - 1/4 cup low-sodium soy sauce
07 - 3 cloves garlic, minced
08 - 2 tbsp ketchup
09 - 1 tbsp olive oil
10 - 1/4 tsp black pepper
11 - 1/2 tsp dried thyme or rosemary
12 - 1/2 tsp salt

# How to Make It:

01 - Place the carrots and potatoes in the bottom of the slow cooker.
02 - Layer the chicken thighs on top of the vegetables.
03 - In a small bowl, whisk together the honey, soy sauce, garlic, ketchup, olive oil, thyme, salt, and pepper.
04 - Pour the sauce evenly over the chicken and vegetables.
05 - Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is cooked through and vegetables are tender.
06 - Serve warm with crusty bread, steamed green beans, or mashed potatoes.
