Honey Garlic Chicken and Broccoli (Print Version)

Juicy chicken and crisp broccoli coated in a sweet-savory honey garlic sauce, ready in just 35 minutes for a quick weeknight meal.

# Ingredients:

01 - 1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes
02 - 1 cup broccoli florets
03 - 1 tablespoon olive oil
04 - Salt and pepper to taste
05 - 1 cup honey
06 - 1 cup low-sodium soy sauce
07 - 1 tablespoon apple cider vinegar
08 - 1 clove garlic, minced
09 - 1 tablespoon cornstarch mixed with 2 teaspoons cold water
10 - Toasted sesame seeds for garnish (optional)
11 - Cooked white or brown rice for serving (optional)

# Steps to Follow:

01 - Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
02 - Season the chicken cubes with salt and pepper, then add them to the skillet. Cook until the chicken is browned and fully cooked, about 6-7 minutes. Remove the chicken from the skillet and set aside.
03 - In the same skillet, add the remaining 1 tablespoon of olive oil. Add the broccoli florets and stir-fry for 3-4 minutes until bright green and tender-crisp.
04 - In a small mixing bowl, whisk together honey, soy sauce, apple cider vinegar, and minced garlic.
05 - Return the cooked chicken to the skillet with the broccoli. Pour the honey garlic sauce over the chicken and broccoli mixture.
06 - Bring the sauce to a simmer over medium heat. Once simmering, stir the cornstarch mixture into the sauce to thicken it, cooking for about 1-2 minutes.
07 - Toss the chicken and broccoli in the thickened sauce until well coated.
08 - Serve the honey garlic chicken and broccoli over cooked rice, sprinkled with toasted sesame seeds if desired.

# Additional Notes:

01 - For a healthier option, substitute white rice with cauliflower rice.
02 - If you prefer a spicier dish, add a pinch of crushed red pepper flakes to the sauce.
03 - Substitute chicken with firm tofu for a vegetarian version of this dish.
04 - To keep the broccoli bright and green, you can blanch it in boiling water for 1 minute before adding to the skillet.
