Preheat oven to 200°C. Slice acorn squashes in half and remove the seeds with a spoon.

In a small bowl, combine honey, melted butter, ground cinnamon, and salt. Stir until fully blended.

Arrange squash halves cut-side up on a parchment-lined baking sheet. Brush the interiors thoroughly with the honey glaze. Roast for 35–40 minutes or until fork-tender.

Remove squash from oven and allow to cool briefly. Fill each half with creamy goat cheese, sprinkle dried cranberries and chopped pecans over the top, and finish with a drizzle of olive oil.

Serve warm as a festive side dish.
