Hawaiian BBQ Chicken & Pineapple (Print Version)

Tropical flavors with chicken, BBQ sauce, and pineapple in easy foil packets.

# Ingredients:

01 - 4 boneless, skinless chicken breasts
02 - 1 cup BBQ sauce
03 - 1 can pineapple chunks or equivalent fresh pineapple chunks
04 - 1 red bell pepper, sliced
05 - 1 yellow bell pepper, sliced
06 - 1 medium red onion, sliced
07 - Salt
08 - Black pepper
09 - Fresh cilantro, for garnish (optional)
10 - Aluminum foil

# Steps to Follow:

01 - Preheat your grill to medium-high heat.
02 - Cut 4 large pieces of aluminum foil and lay them flat on a clean surface.
03 - Place one chicken breast in the center of each foil piece. Pour 1/4 cup of BBQ sauce over each chicken breast, ensuring it’s well coated. Add an equal amount of pineapple chunks, sliced bell peppers, and red onion on top of each chicken breast. Season with salt and pepper to taste.
04 - Fold the foil over the chicken and vegetables, crimping the edges to seal tightly.
05 - Place the foil packets on the grill and cook for about 25-30 minutes, or until the chicken is cooked through and no longer pink.
06 - Carefully open the packets (watch out for steam!) and garnish with fresh cilantro if desired. Serve warm with your choice of sides.
