Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Lightly flour your work surface and roll out the puff pastry sheet to approximately 30×30 cm.

Cut the puff pastry into 16 equal squares using a sharp knife.

Spread a thin layer of Dijon mustard on each square.

Place a slice of ham followed by a slice of cheddar cheese on half of the squares.

Cover with the remaining squares, pressing the edges gently to seal.

Brush the tops with beaten egg and sprinkle with poppy seeds if desired.

Season the squares with salt and pepper.

Transfer the squares to the prepared baking sheet and bake for 15-20 minutes or until golden brown and puffed.

Remove the squares from the oven and let cool slightly before serving.
