Grilled Peach Blueberry Salad (Print Version)

Sweet grilled peaches and blueberries on mixed greens with feta, toasted nuts, and honey-balsamic dressing.

# Ingredients:

→ For the Salad

01 - 4 ripe peaches, halved and pitted
02 - 1 cup fresh blueberries
03 - 4 cups mixed greens (e.g., arugula, spinach, or spring mix)
04 - ¼ cup crumbled feta cheese (optional)
05 - ¼ cup toasted pecans or walnuts, roughly chopped

→ For the Dressing

06 - ¼ cup olive oil
07 - 2 tablespoons balsamic vinegar
08 - 1 tablespoon honey
09 - 1 teaspoon Dijon mustard
10 - Salt and pepper, to taste

# Steps to Follow:

01 - Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
02 - Brush the cut sides of the peach halves with a little olive oil. Place the peaches cut-side down on the preheated grill. Grill for about 3-4 minutes until they have nice grill marks and are slightly softened. Remove from the grill and let cool slightly. Slice each half into wedges.
03 - In a small bowl or a jar with a lid, combine the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Whisk or shake until well combined.
04 - In a large salad bowl, add the mixed greens. Top with the grilled peach wedges, fresh blueberries, crumbled feta cheese (if using), and toasted nuts.
05 - Drizzle the dressing over the salad. Toss gently to combine, ensuring all the ingredients are evenly coated with the dressing.
06 - Serve the salad immediately as a refreshing and delicious appetizer, side dish, or light lunch.
