Grilled Mango Pineapple Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 4 boneless, skinless chicken breasts
02 - Salt and pepper to taste
03 - Olive oil, for grilling

→ Mango-Pineapple Salsa

04 - 1 ripe mango, diced
05 - 1 cup pineapple chunks (fresh or canned)
06 - 1/4 cup red bell pepper, finely chopped
07 - 1/4 cup green onions, chopped
08 - 2 cloves garlic, minced
09 - 1/4 cup soy sauce
10 - 2 tablespoons honey
11 - 1 tablespoon lime juice
12 - 1 teaspoon ginger, grated
13 - 1 teaspoon chili flakes (optional for spice)
14 - Fresh cilantro, for garnish

# Steps to Follow:

01 - In a bowl, combine diced mango, pineapple chunks, red bell pepper, green onions, minced garlic, soy sauce, honey, lime juice, grated ginger, and chili flakes (if using). Mix well and let marinate.
02 - Season both sides of the chicken breasts with salt and pepper. Lightly brush with olive oil.
03 - Preheat grill to medium-high heat. Grill chicken for 6-7 minutes on one side, flip, and grill for another 6-7 minutes until fully cooked and reaching an internal temperature of 165°F (74°C).
04 - Spoon some mango-pineapple salsa over the chicken during the last few minutes of grilling. Close grill lid to heat salsa. Remove chicken and let rest for a few minutes.
05 - Top grilled chicken with remaining mango-pineapple salsa and fresh cilantro. Serve with grilled vegetables or rice.
