Grilled Chicken Caprese (Print Version)

Juicy chicken topped with mozzarella, tomato, basil and homemade balsamic reduction for a delicious Italian-inspired meal.

# Ingredients:

→ Chicken and Seasoning

01 - 4 chicken breasts
02 - 1 teaspoon Italian seasoning
03 - 1/2 teaspoon garlic powder
04 - 1/2 teaspoon onion powder
05 - Salt and pepper, to taste

→ Toppings

06 - 4 slices mozzarella
07 - 4 slices tomato
08 - 2 tablespoons fresh basil, sliced

→ Balsamic Reduction

09 - 1/2 cup balsamic vinegar
10 - 2 tablespoons light brown sugar

# Steps to Follow:

01 - Preheat the grill to medium-high heat. Season the chicken breasts with Italian seasoning, garlic powder, and onion powder. Sprinkle salt and pepper evenly on both sides.
02 - Spray the grill with non-stick cooking spray. Place the chicken breasts on the grill and cook until they are almost fully cooked, approximately 6 to 7 minutes per side.
03 - Place a slice of mozzarella on each chicken breast. Close the grill lid and cook for an additional 2 to 3 minutes, or until the cheese has melted.
04 - Remove the chicken from the grill. Top each piece with a slice of tomato and a sprinkle of fresh basil. Drizzle the balsamic reduction on top before serving.
05 - Combine balsamic vinegar and light brown sugar in a small saucepan. Simmer over medium heat for 10 minutes or until the sauce has reduced by half. Keep warm until ready to serve.
