# Ingredients List:

→ Chicken

01 - 4 boneless, skinless chicken breasts or thighs
02 - 1 teaspoon Italian seasoning
03 - 0.5 teaspoon smoked paprika
04 - 0.5 teaspoon fine salt
05 - 0.25 teaspoon freshly ground black pepper
06 - 1 tablespoon olive oil

→ Potatoes

07 - 700 grams baby Yukon Gold or red potatoes, halved
08 - 3 tablespoons olive oil
09 - 4 garlic cloves, finely minced
10 - 33 grams grated Parmesan cheese
11 - 0.5 teaspoon fine salt
12 - 0.25 teaspoon freshly ground black pepper

→ Garnish

13 - 1 tablespoon chopped fresh parsley

# How to Make It:

01 - Preheat the oven to 200°C. Line a large baking sheet with parchment paper or lightly grease with oil.
02 - Pat chicken dry with paper towels. In a small bowl, combine Italian seasoning, smoked paprika, salt, and pepper. Rub chicken pieces with olive oil, then coat with the seasoning mixture on all sides.
03 - In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, grated Parmesan, salt, and black pepper until evenly coated.
04 - Arrange the seasoned chicken breasts on one side of the prepared baking tray. Spread the coated potatoes in a single layer on the opposite side for even roasting.
05 - Transfer the tray to the oven and roast for 25–30 minutes. Flip potatoes halfway through. Ensure the chicken reaches an internal temperature of 74°C using a meat thermometer.
06 - During the last 5 minutes of cooking, sprinkle extra Parmesan cheese over both chicken and potatoes, then broil until the surface is golden and crisp.
07 - Remove from the oven, scatter with fresh chopped parsley, and serve hot.

# Extra Tips:

01 - For best results, allow the chicken to rest for a few minutes before slicing to retain its juices.
