Preheat the oven to 200°C. Line a large baking sheet with parchment paper or lightly grease with oil.

Pat chicken dry with paper towels. In a small bowl, combine Italian seasoning, smoked paprika, salt, and pepper. Rub chicken pieces with olive oil, then coat with the seasoning mixture on all sides.

In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, grated Parmesan, salt, and black pepper until evenly coated.

Arrange the seasoned chicken breasts on one side of the prepared baking tray. Spread the coated potatoes in a single layer on the opposite side for even roasting.

Transfer the tray to the oven and roast for 25–30 minutes. Flip potatoes halfway through. Ensure the chicken reaches an internal temperature of 74°C using a meat thermometer.

During the last 5 minutes of cooking, sprinkle extra Parmesan cheese over both chicken and potatoes, then broil until the surface is golden and crisp.

Remove from the oven, scatter with fresh chopped parsley, and serve hot.
