Garlic Chilli Noodles with Soy (Print Version)

Ribbon noodles tossed in a bold aromatic sauce featuring garlic, chilli, soy and Chinese black vinegar. Quick, simple and flavorful.

# Ingredients:

→ Noodles

01 - 300g dried ribbon noodles

→ Sauce

02 - 1½ tbsp cooking oil (e.g., grapeseed oil)
03 - ½ cup scallions (white part), thinly sliced
04 - 1½ tbsp minced garlic (4 cloves)
05 - ¼ cup low-sodium vegetable broth
06 - 2 tbsp light soy sauce
07 - 1 tbsp dark soy sauce
08 - 1 tbsp Chinese black vinegar
09 - 1 tbsp Korean chilli powder/flakes (e.g., Gochugaru)

→ Garnish

10 - ¼ cup scallions (green part), thinly sliced
11 - 1 tbsp toasted sesame seeds
12 - Extra chilli flakes (optional)

# Steps to Follow:

01 - Heat a small frying pan over very low heat. Add cooking oil, scallions (white part), and minced garlic. Sauté for 5 minutes, stirring constantly to prevent burning.
02 - Add vegetable broth, light soy sauce, dark soy sauce, black vinegar, and Korean chilli powder/flakes. Increase heat to medium-low and simmer for 5 minutes, stirring occasionally.
03 - Cook noodles in a pot of boiling water as per package instructions. Drain thoroughly.
04 - Combine drained noodles with the garlic chilli sauce, tossing to coat evenly. Garnish with scallions (green part), toasted sesame seeds, and additional chilli flakes if desired. Serve hot and enjoy!
