03 - 450 grams Yukon gold potatoes, cut into 1.25 centimeter cubes

06 - 0.5 teaspoon dried oregano
07 - 0.5 teaspoon sea salt, plus extra to taste
08 - 0.25 teaspoon ground black pepper, plus extra to taste
09 - 570 grams sirloin steak, cut into 1.25 centimeter cubes

# How to Make It:

01 - Place a large cast iron skillet over medium heat. Add olive oil and half of the ghee or butter, allowing it to melt completely.
02 - Once the fat is melted, add the cubed potatoes. Sprinkle the minced garlic, dried thyme, dried oregano, sea salt, and black pepper evenly over the potatoes. Cook untouched for 2 to 3 minutes. Stir and continue cooking, stirring every 1 to 2 minutes, until the potatoes are golden brown and fork tender, approximately 8 to 10 minutes. Adjust timing if necessary for larger pieces or crowded pan. Remove potatoes and browned bits from the pan and set aside.
03 - Increase skillet heat to medium-high. Add remaining ghee or butter and let it melt. Arrange steak cubes evenly in the pan, seasoning lightly with additional salt and pepper. Sear for 2 minutes without stirring to develop a golden crust, then stir and cook 1 to 2 more minutes until well browned.
04 - Return cooked potatoes and aromatics to the skillet. Mix thoroughly to combine with the steak. Taste and adjust seasoning with extra salt or pepper as needed. Garnish with freshly chopped parsley and serve immediately.
