01 - 2 pounds fresh ripe figs, quartered
02 - 1 cup granulated sugar
03 - 1/4 cup freshly squeezed lemon juice
04 - Zest of 1 lemon
05 - 1 teaspoon vanilla extract

# How to Make It:

01 - Wash the figs under cool water, remove stems, and cut into quarters.
02 - In a large pot, combine figs, sugar, lemon juice, and lemon zest. Let sit for about an hour to release juices.
03 - Heat over medium heat until it reaches a gentle boil, stirring occasionally. After 20 minutes, reduce heat to low.
