French Apple Invisible Cake (Print-Friendly Version)

Thin apple slices layered in a light batter, topped with almonds and a touch of powdered sugar.

# Ingredients List:

→ Base

01 - 6 medium firm apples (such as Golden Delicious, Pink Lady, or Honeycrisp)
02 - 2 large eggs
03 - 50 g granulated sugar
04 - 2 tbsp brown sugar
05 - 60 g all-purpose flour
06 - 0.5 tsp baking powder
07 - 120 ml whole milk
08 - 2 tbsp unsalted butter, melted
09 - 1 tsp vanilla extract
10 - Pinch of salt

→ Finishing

11 - 2 tbsp sliced almonds
12 - Powdered sugar, for dusting

# How to Make It:

01 - Peel, core, and slice apples very thinly using a mandoline or sharp knife and place in a large mixing bowl.
02 - In a separate bowl, whisk eggs with granulated sugar and brown sugar until the mixture is light and fluffy.
03 - Add melted butter, milk, and vanilla extract to the egg mixture and blend until thoroughly combined.
04 - Sift in all-purpose flour, baking powder, and salt. Whisk continuously until you achieve a smooth batter.
05 - Carefully fold the apple slices into the batter, ensuring all pieces are evenly coated. The mixture will be thin; apples should be well layered and bound just enough by batter.
06 - Preheat oven to 175°C. Grease and line a loaf or square pan with parchment paper.
07 - Transfer the apple mixture into the prepared pan, pressing gently to create an even, compact layer. Sprinkle sliced almonds over the surface.
08 - Bake in the center of the preheated oven for 45 to 50 minutes, until the cake is golden brown and set.
09 - Allow the cake to cool completely in the pan before slicing to ensure structural integrity. Dust lightly with powdered sugar prior to serving.

# Extra Tips:

01 - Slice apples as uniformly as possible with a mandoline for consistent texture.
02 - It is essential to let the cake cool fully to maintain a clean structure when slicing.
03 - Experiment with different apple varieties to vary the flavor profile.
