Easy Zuppa Toscana Sausage Soup (Print-Friendly Version)

01 - 5 strips thick-cut bacon
02 - 500 g mild Italian sausage, casings removed
03 - 1 medium onion, chopped
04 - 5 cloves garlic, minced
05 - 480 ml chicken broth
06 - 950 ml water
07 - 4 large red potatoes, diced with skins on
08 - 0.25 teaspoon Italian seasoning
09 - 240 ml heavy cream
10 - 1 small bunch kale, stems removed and leaves torn into bite-size pieces
11 - Salt and pepper, to taste

# How to Make It:

01 - Using kitchen shears or a knife, cut bacon into small pieces and place in a large pot. Cook over medium-high heat for 5 minutes to render fat and begin crisping.
02 - Add Italian sausage meat to the pot. Brown sausage and bacon together, stirring occasionally, for approximately 15 minutes or until thoroughly cooked and nicely crisp. Remove excess fat, leaving a few tablespoons for flavour.
03 - Stir in chopped onion and minced garlic. Sauté for 2 to 3 minutes until fragrant and translucent.
04 - Pour in chicken broth and water. Add diced red potatoes and Italian seasoning. Raise heat to high and bring mixture to a boil.
05 - Reduce heat to medium-low and simmer for 10 to 15 minutes or until potatoes are fork-tender.
06 - Stir in heavy cream and kale. Cook for an additional 5 minutes until kale is wilted and softened. Season with salt and pepper as needed before serving.
