Easy Strawberry Cake Strawberry Sauce (Print-Friendly Version)

01 - 2 large eggs, at room temperature
02 - 200 g granulated sugar
03 - 240 g sour cream
04 - 120 ml light olive oil or vegetable oil
05 - 1 teaspoon vanilla extract
06 - 250 g all-purpose flour
07 - 2 teaspoons baking powder
08 - 1/4 teaspoon salt
09 - 340 g strawberries, hulled
10 - 1 teaspoon powdered sugar, for dusting (optional)

→ Strawberry Sauce

11 - 450 g strawberries, hulled and halved
12 - 50 g granulated sugar, or to taste

# How to Make It:

01 - Grease a 23-centimeter springform pan with butter and line the base with parchment paper. Preheat the oven to 190°C. Prepare 340 grams of strawberries by finely dicing 170 grams and cutting the remaining 170 grams into halves.
02 - In a large mixing bowl, beat 2 eggs with 200 grams granulated sugar using an electric mixer on high speed for 5 minutes until the mixture becomes pale and thick.
03 - Add 240 grams sour cream, 120 milliliters oil, and 1 teaspoon vanilla extract to the egg mixture. Mix on low speed until fully combined.
04 - In a separate bowl, whisk together 250 grams flour, 2 teaspoons baking powder, and 1/4 teaspoon salt until well blended.
05 - Gradually add the flour mixture to the batter in three portions while mixing on medium-low speed. Incorporate after each addition and mix until just combined, taking care not to over-mix.
06 - Pour half of the prepared batter into the springform pan. Sprinkle the diced strawberries evenly over this layer. Spread the remaining batter on top, then arrange the halved strawberries cut side down, gently pressing them into the surface.
07 - Bake at 190°C for 45–55 minutes, or until a toothpick inserted into the center emerges clean. Allow the cake to cool in the pan for 15–20 minutes before removing the springform ring.
08 - Run a thin spatula around the edges to loosen the cake, then transfer to a serving platter. Let cool until just warm or at room temperature. Dust with powdered sugar if desired.
09 - While the cake bakes, blend 450 grams strawberries with 50 grams granulated sugar in a blender or food processor until smooth, adjusting sugar to taste.
10 - Slice the cake and serve with generous spoonfuls of fresh strawberry sauce.
