Chicken, rice, tzatziki, and feta create a flavorful Mediterranean-inspired baked dish, finished with fresh garnishes.

# Ingredients List:

→ Base

01 - 200 grams long-grain white rice
02 - 355 millilitres low-sodium chicken broth

→ Protein

03 - 680 grams boneless, skinless chicken breasts, cut into bite-sized pieces

→ Seasoning

04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon dried oregano
07 - 0.5 teaspoon paprika

→ Sauce

08 - 240 millilitres tzatziki sauce (store-bought or homemade)

→ Garnish

09 - 1 medium cucumber, thinly sliced
10 - 60 grams crumbled feta cheese
11 - 30 grams chopped fresh parsley or dill

# How to Make It:

01 - Preheat oven to 190°C. Lightly grease a 23×33 cm baking dish with non-stick spray or olive oil.
02 - Spread uncooked rice evenly across the bottom of the prepared dish. Pour chicken broth over rice, ensuring grains are completely submerged.
03 - Distribute chicken pieces evenly over the rice. Sprinkle with garlic powder, onion powder, oregano, and paprika for balanced Mediterranean seasoning.
04 - Spoon tzatziki sauce over the chicken, spreading gently to coat the surface. This helps retain moisture during baking.
05 - Cover the dish tightly with aluminium foil. Bake for 35–40 minutes, until chicken is fully cooked and rice is tender. If excess liquid remains, bake uncovered for an additional 5–10 minutes.
06 - Remove from oven and let it rest for 5 minutes. Finish by garnishing with crumbled feta cheese, chopped parsley or dill, and cucumber slices.
07 - Portion and serve warm to enjoy the vibrant Mediterranean flavours and creamy texture.

# Extra Tips:

01 - Double the ingredient quantities for larger gatherings or meal prepping.
02 - Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
