Crisp cucumbers, cherry tomatoes, and fresh mozzarella tossed in a flavorful balsamic marinade for a light, refreshing meal.

# Ingredients:

→ Marinade

01 - 2 tablespoons olive oil
02 - 1 tablespoon balsamic vinegar
03 - 1 tablespoon dried oregano
04 - 1 tablespoon dried basil
05 - Pinch of salt
06 - Pinch of black pepper

→ Salad

07 - 1 cucumber, peeled, fork-scored, thinly sliced, then diced
08 - 1½ cups cherry tomatoes, quartered
09 - 8 oz fresh mozzarella, sliced or pearl-sized
10 - ½ large red onion, chopped into small pieces
11 - Fresh basil leaves (optional)

# Steps to Follow:

01 - In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, dried basil, salt, and black pepper until combined. Set aside to allow the flavors to meld.
02 - Peel the cucumber and use a fork to scrape the skin to create texture. Slice the cucumber thinly, then dice into small pieces. Place the diced cucumber into a medium-sized bowl.
03 - Quarter the cherry tomatoes and add them to the bowl with the cucumber. Dice the red onion into small pieces and add it to the same bowl. Skip this step if you choose not to use onion.
04 - Slice the mozzarella into bite-sized pieces, or use pearl-sized mozzarella if available. Add it to the bowl with the cucumber, tomatoes, and onion.
05 - Pour the prepared marinade over the salad ingredients and mix well, ensuring the marinade fully coats everything. Let the salad sit for 10 minutes to allow the flavors to combine before serving.
