Fresh Cucumber Caprese Salad (Print Version)

Crisp cucumbers, juicy tomatoes and fresh mozzarella tossed with herbs and balsamic for a refreshing Mediterranean-inspired dish.

# Ingredients:

→ Marinade

01 - 2 tablespoons olive oil
02 - 1 tablespoon balsamic vinegar
03 - 1 tablespoon dried oregano
04 - 1 tablespoon dried basil
05 - Pinch salt
06 - Pinch pepper

→ Salad

07 - 1 cucumber, peeled, fork-scored, thinly sliced, and diced
08 - 1½ cups cherry tomatoes, quartered
09 - 8 oz fresh mozzarella
10 - ½ large red onion, diced
11 - Optional: fresh basil leaves

# Steps to Follow:

01 - In a small bowl, mix olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Stir until combined and set aside.
02 - Wash and peel the cucumber. Use a fork to scrape the surface for texture, then thinly slice and dice it into small pieces. Add to a medium-sized bowl.
03 - Quarter the cherry tomatoes and add them to the bowl with the cucumber. Dice the red onion and add it to the bowl. Skip this step if not using onion.
04 - Slice fresh mozzarella into bite-sized pieces or use pearl-sized mozzarella balls. Add to the bowl with the other ingredients.
05 - Pour the prepared marinade over the salad ingredients. Mix thoroughly to ensure even coating. Let the salad sit for 10 minutes before serving to allow the flavors to meld.
