Crispy Sesame Chicken (Print Version)

Crispy fried chicken pieces coated in a sticky-sweet sesame sauce, garnished with sesame seeds and green onions.

# Ingredients:

→ Main Ingredients

01 - 450g chicken, cut into bite-sized pieces
02 - 1.5 tbsp sesame oil
03 - 2 tsp sesame seeds
04 - 1 green onion, chopped

→ Batter

05 - 120g cornstarch
06 - 2 tbsp flour
07 - 1 tbsp soy sauce
08 - 1 egg white
09 - 1/4 tsp white pepper
10 - 80ml water

→ Sesame Sauce

11 - 3 tbsp honey
12 - 2 tbsp soy sauce
13 - 1.5 tbsp ketchup
14 - 1.5 tbsp brown sugar
15 - 1 tbsp rice vinegar
16 - 1 tbsp shaoxing wine
17 - 1 clove garlic, grated

# Steps to Follow:

01 - Combine all batter ingredients in a bowl until smooth with a paint-like consistency. Add more water if too thick.
02 - Add chicken pieces to the batter and gently mix until all pieces are well coated.
03 - Deep fry the coated chicken at 165-170°C for 5-7 minutes, until fully cooked through and golden.
04 - Increase oil temperature to 190°C and fry chicken a second time for 30-60 seconds until golden brown and crispy. Set aside on a wire rack.
05 - Mix all sesame sauce ingredients in a bowl until smooth.
06 - Pour sauce into a large pan or wok and bring to a boil for 1-2 minutes until slightly thickened.
07 - Add fried chicken, sesame oil, and sesame seeds to the thickened sauce. Gently toss until chicken is fully coated.
08 - Top with chopped green onions and serve with rice and fresh vegetables.

# Additional Notes:

01 - The alcohol in shaoxing wine cooks off during stir-frying and sauce reduction. This ingredient can be omitted if preferred.
02 - Adjust sweetness to taste by varying the amounts of honey and brown sugar before combining with chicken.
