Deep fry the coated chicken at 165-170°C for 5-7 minutes, until fully cooked through and golden.

Increase oil temperature to 190°C and fry chicken a second time for 30-60 seconds until golden brown and crispy. Set aside on a wire rack.

Mix all sesame sauce ingredients in a bowl until smooth.

Pour sauce into a large pan or wok and bring to a boil for 1-2 minutes until slightly thickened.

Add fried chicken, sesame oil, and sesame seeds to the thickened sauce. Gently toss until chicken is fully coated.
