→ Greek Marinated Chicken

01 - 500g chicken breast, cut into bite-sized pieces
02 - 3 tablespoons extra virgin olive oil
03 - Juice of 1 large lemon
04 - 2 cloves garlic, minced
05 - 1 teaspoon dried oregano
06 - 1/2 teaspoon dried thyme
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon black pepper

09 - 1 large cucumber
10 - 200g thick full-fat Greek yoghurt
11 - 2 tablespoons fresh dill, finely chopped
12 - 1 tablespoon fresh mint, finely chopped (optional)
13 - 1 tablespoon lemon juice
14 - 1 clove garlic, finely grated or minced
15 - 1 tablespoon extra virgin olive oil
16 - Pinch of salt

→ For Assembly

17 - 200g cooked quinoa, couscous, or rice
18 - 1 cup cherry tomatoes, halved
19 - 1/2 red onion, thinly sliced
20 - 1/2 cup feta cheese, crumbled
21 - 1/4 cup Kalamata olives, pitted
22 - Fresh dill or parsley, for garnish
23 - Lemon wedges, for serving

# How to Make It:

01 - Whisk olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper in a medium bowl. Add chicken pieces and mix thoroughly to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours for enhanced flavour.
02 - Grate the cucumber, then transfer to a clean tea towel and squeeze out excess moisture. Combine the drained cucumber with Greek yoghurt, chopped dill, mint (if using), lemon juice, grated garlic, olive oil, and a pinch of salt. Mix well, adjust seasoning if desired, cover, and refrigerate.
03 - Heat a large frying pan or griddle pan over medium-high heat. Add marinated chicken in a single layer, working in batches to avoid crowding. Cook for 5–7 minutes, turning occasionally, until chicken is golden and cooked through. Let rest briefly before serving.
04 - Divide cooked quinoa, couscous, or rice between two bowls. Arrange cooked chicken, cherry tomatoes, red onion, and Kalamata olives on top. Spoon over tzatziki sauce, then sprinkle with crumbled feta and fresh herbs. Serve immediately with lemon wedges on the side.
