Chicken Garlic Gravy Mashed Potatoes (Print-Friendly Version)

Juicy chicken with garlic gravy rests atop buttery mashed potatoes blended with cheddar for satisfying flavor.

# Ingredients List:

→ For the Chicken and Garlic Gravy

01 - 2 boneless skinless chicken breasts or thighs
02 - 6 cloves garlic, minced
03 - 2 tablespoons butter
04 - 2 tablespoons all-purpose flour
05 - 120 millilitres chicken broth
06 - 60 millilitres heavy cream (optional)
07 - Salt and freshly ground black pepper, to taste

→ For the Cheesy Mashed Potatoes

08 - 900 grams Yukon Gold potatoes, peeled and cubed
09 - 2 tablespoons butter
10 - 120 millilitres milk
11 - 100 grams shredded cheddar cheese
12 - Salt and freshly ground black pepper, to taste

→ For Garnish

13 - 1 tablespoon chopped fresh parsley or chives

# How to Make It:

01 - Season the chicken on both sides with salt and pepper. Heat a skillet over medium-high heat, add a drizzle of oil, and sear the chicken until golden and fully cooked through (internal temperature 74°C). Remove from the skillet and keep warm.
02 - Reduce the heat to medium. Melt butter in the same skillet and gently sauté the minced garlic for 1 minute until aromatic, ensuring the garlic does not brown.
03 - Stir in flour to create a smooth roux, cooking for 1 to 2 minutes while stirring continuously.
04 - Gradually whisk in chicken broth, breaking up any lumps. Bring to a simmer and cook until the sauce thickens. Incorporate heavy cream if using and adjust seasoning with salt and pepper.
05 - Place the cubed potatoes in a large pot of salted cold water. Bring to a boil and cook for 12 to 15 minutes until tender. Drain thoroughly.
06 - Mash drained potatoes with butter, warmed milk, and shredded cheddar cheese until creamy and smooth. Season to taste with salt and pepper.
07 - Plate a portion of mashed potatoes, arrange sliced chicken on top, and generously ladle over the garlic gravy. Garnish with chopped fresh herbs and serve immediately.

# Extra Tips:

01 - Warm the milk before mashing for extra creamy potatoes.
02 - Avoid browning the garlic to prevent a bitter flavor in the gravy.
03 - Add a splash of chicken broth when reheating leftovers to maintain moisture and taste.
