# Ingredients:

01 - 3 lbs large fresh strawberries
02 - 8 oz cream cheese, softened
03 - 1 cup powdered sugar
04 - 1 tsp vanilla extract
05 - 1.5 cups heavy whipping cream, cold
06 - 0.25 cup graham cracker crumbs

# Steps to Follow:

01 - Slice the strawberries lengthwise, keeping the stems intact. Cut a tiny slice off the bottom so they sit flat. Carefully carve a small hollow in the center of each strawberry using a melon baller.
02 - Whip the heavy cream until stiff peaks form, approximately 3-4 minutes. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until fluffy. Gently fold the whipped cream into the cream cheese mixture.
03 - Fill a piping bag with the cheesecake mixture and pipe generously into the hollows of the strawberries. Sprinkle the graham cracker crumbs over the top. Chill for 1 hour before serving.
