Preheat the oven to 175°C and grease a medium baking dish with cooking spray.

In a medium skillet over medium-high heat, melt 1 tablespoon unsalted butter. Add chopped apples, brown sugar, ground cinnamon, and a pinch of salt. Cook, stirring occasionally, until apples are tender and mixture is bubbling, about 5 minutes. Remove from heat and allow filling to cool slightly.

Separate biscuit dough into individual rounds. Gently stretch and flatten each biscuit using your fingers, rolling pin, or tortilla press until evenly thin.

Place 1 tablespoon apple filling in the center of each flattened biscuit. Top with one piece of caramel candy. Bring dough edges up over the filling and pinch to fully seal. Roll gently into a ball.

Arrange sealed dough balls seam side down in the prepared baking dish. Brush tops with melted butter. Optionally, sprinkle with cinnamon sugar for added flavor.

Bake in preheated oven for 30 to 35 minutes until dough is golden brown.
