Caprese Pasta Salad (Print Version)

A refreshing combination of pasta, mozzarella pearls, grape tomatoes and basil tossed in homemade balsamic vinaigrette.

# Ingredients:

→ Vinaigrette Dressing

01 - 1/4 cup olive oil
02 - 1/4 cup balsamic vinegar
03 - 2-3 tablespoons fresh lemon juice
04 - 1 clove garlic, minced
05 - 1 teaspoon Italian seasoning
06 - 1/4 teaspoon kosher salt
07 - 1/4 teaspoon black pepper

→ Caprese Pasta Salad

08 - 1/2 pound dried farfalle pasta (or other small pasta)
09 - 8 ounces mozzarella pearls or cubed fresh mozzarella
10 - 2 cups grape tomatoes, halved
11 - 1/4 cup fresh basil leaves, thinly sliced
12 - Salt and pepper to taste

# Steps to Follow:

01 - In a small bowl or jar with a lid, combine olive oil, balsamic vinegar, lemon juice, garlic, Italian seasoning, salt, and pepper. Whisk or shake until thoroughly combined. Set aside.
02 - Cook pasta according to package directions. Drain and rinse with cold water to cool.
03 - In a large bowl, combine cooked pasta, grape tomatoes, mozzarella, and fresh basil. Drizzle with the prepared vinaigrette and toss until evenly coated. Taste and adjust seasoning as needed.

# Additional Notes:

01 - To make ahead, drizzle with three-quarters of the dressing, toss, cover, and refrigerate. Before serving, add the remaining dressing, toss, and serve.
