Place one chicken breast onto a sheet of parchment paper. Fold the paper over the chicken and using a rolling pin, pound to an even thickness of slightly less than 1 inch. Repeat with the remaining chicken breasts.

In a small bowl, combine Italian seasoning, sea salt, garlic powder, onion powder, and cracked pepper. Stir to mix well.

Brush the chicken breasts with olive oil and sprinkle with the seasoning blend on both sides.

Heat a grill or grill pan over high heat. Place chicken breasts on the grill and cook for 5-6 minutes per side, or until the internal temperature reaches 155°F using an instant-read thermometer.

Top each chicken breast with 2 slices of fresh mozzarella. Continue grilling for 3 minutes, or until the cheese melts and the internal temperature reaches 165°F.

Place chicken on a platter or plates. Top each with 2-3 tomato slices, fresh basil, and additional salt and pepper to taste. Drizzle with aged balsamic vinegar or balsamic glaze. Serve immediately.
