# Ingredients List:

01 - 16 oz frozen diced butternut squash
02 - 1.5 cups fresh chopped tomatoes
03 - 1/2 yellow onion

→ Seasonings

04 - 2 tbsp olive oil
05 - 1 tsp salt
06 - 1/4 tsp black pepper
07 - 1/2 tsp dried thyme

→ Pasta

08 - 1 lb pasta

→ Liquids

09 - 1/3 cup pasta water (reserved from cooked pasta)

# How to Make It:

01 - Preheat oven to 450°F and line a baking sheet with parchment paper.
02 - Place frozen cubed butternut squash, chopped tomatoes, and sliced onion on the baking sheet.
03 - Drizzle olive oil on top and season with salt, pepper, and thyme. Mix to cover the vegetables evenly with oil and seasonings.
04 - Bake at 450°F for 20 minutes.
05 - While the veggies bake, cook the pasta according to package instructions. Reserve 1/3 cup of the pasta water before draining.
06 - Take the cooked vegetables hot from the oven and blend with the reserved pasta water until a smooth sauce forms.
07 - Pour the sauce over the cooked pasta and toss to coat evenly.
08 - Serve immediately with parmesan cheese or plant-based parmesan if desired.
