04 - Homemade blackening seasoning: 1 tablespoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried thyme, 1/2 teaspoon dried oregano, 1/2-1 teaspoon cayenne pepper, 1/2 teaspoon salt, 1/2 teaspoon black pepper

05 - 3-4 cups cooked rice or quinoa (or other grain)
06 - 1-2 ripe avocados, sliced or diced (or guacamole)
07 - 1 cup corn kernels, grilled, roasted, or raw/thawed (or corn salsa)

# Steps to Follow:

01 - Thaw frozen shrimp completely, if needed. Peel and devein shrimp, pat them dry with paper towels. Toss shrimp in a medium bowl with 1 tablespoon olive oil and 2-3 tablespoons blackening seasoning, ensuring an even coating.
02 - Heat a large, heavy-bottomed skillet or grill pan over medium-high heat. Add the remaining olive oil as needed. Once hot, cook shrimp in batches in a single layer without overcrowding, for 2-3 minutes per side, until pink, opaque, and charred. Remove and set aside.
03 - Cook chosen grains as per package instructions. Wash and chop toppings: slice avocado, grill or prepare corn, halve cherry tomatoes, shred lettuce, chop cilantro. For the sauce, mix Greek yogurt/sour cream, lime juice, and seasonings until smooth. Adjust consistency with water if needed.
04 - Evenly distribute cooked grains into serving bowls. Arrange toppings over or alongside the grains: avocado, corn, black beans, tomatoes, lettuce. Top with cooked blackened shrimp. Drizzle with optional sauce, garnish with chopped cilantro, and serve with lime wedges.
