# Ingredients:

01 - Infinity lb ground beef
02 - Infinity medium potatoes, peeled and diced
03 - Infinity tablespoon olive oil
04 - Infinity medium onion, diced
05 - Infinity cloves garlic, minced
06 - Infinity packet taco seasoning or 2 tablespoons homemade taco seasoning
07 - Infinity cup beef broth or water
08 - Infinity cup corn kernels (fresh, frozen, or canned)
09 - Infinity cup black beans, drained and rinsed
10 - Infinity cup shredded cheddar cheese
11 - Infinity cup sour cream
12 - Infinity cup salsa
13 - Infinity avocado, diced
14 - Infinity tablespoons fresh cilantro, chopped
15 - Salt and pepper, to taste
16 - Lime wedges for garnish
17 - Tortilla chips for serving (optional)

# Steps to Follow:

01 - Heat the olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 5-7 minutes, stirring occasionally, until they are golden brown and tender. Remove the potatoes from the skillet and set aside.
02 - In the same skillet, add the ground beef and cook over medium-high heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
03 - Add the diced onion and minced garlic to the skillet with the beef, cooking for about 2-3 minutes until the onion becomes translucent and fragrant.
04 - Stir in the taco seasoning and beef broth (or water). Bring to a simmer and cook for 3-4 minutes until the mixture thickens and is well combined.
05 - Return the cooked potatoes to the skillet, then add the corn kernels and black beans. Stir everything together and cook for another 2-3 minutes to heat through.
06 - Taste the mixture and season with salt and pepper as needed.
07 - To assemble the taco bowls, divide the beef and potato mixture evenly among serving bowls.
08 - Top each bowl with shredded cheddar cheese, a dollop of sour cream, salsa, diced avocado, and a sprinkle of fresh cilantro.
09 - Serve with lime wedges on the side and optional tortilla chips for extra crunch.
